Sweet Potato and Cashew Chicken Bowl
Makes 2
Ingredients:
For the chicken- season to taste
• 2 boneless, skinless chicken breasts (or thighs)
• Olive oil
• Salt
• Pepper
• Garlic powder
• Paprika
For the rice
• 1 cup cooked rice (white, brown, or jasmine)
• 1 cup cooked quinoa
Toppings
• Chris’ Sweet Potato and Cashew dip
• Cabbage (picked if preferred)
• Spring onions
• Coriander
• Any other vegetables that are your favourite
Assembling the bowl
1. Season the chicken breasts with olive oil, garlic powder, paprika, onion powder, salt, and pepper. If you want extra flavour, marinate the chicken in soy sauce for 30 minutes before cooking.
2. Heat a pan over medium heat and cook the chicken breasts for 6-7 minutes per side.
3. Once cooked, let the chicken rest for a few minutes, then slice it thinly.
4. Mix cooked rice and quinoa together in a bowl
5. Assemble rice, cooked chicken and toppings of your choice in the bowl
6. Add a large dollop of Sweet Potato and Cashew dip
7. Season with spring onions and coriander to your liking
8. Enjoy!!
